Fall Favorite Recipes: Sweet Potato Hash

Have I mentioned that fall is my favorite season yet? While summer is wonderful in its own way with beaches and BBQs, fall meals are hands down my favorite.  They are homey, comfortable meals that just soothe my soul. I mean seriously,  is there really any issue that a bowl of warm stew or a hot cup of cider can’t fix? (Ok… maybe not fix, but definitely make you feel a little better!)

So when I woke up on Sunday and felt that slight crisp in the air,  I was dying to get in the kitchen and get to cooking! So here was my first attempt at making Sweet Potato Hash!

Ingredients

4 strips of turkey bacon,  diced

1 large sweet potato, cubed

1 onion,  sliced thin

4 eggs

Salt and pepper

Eating Healthy On A Budget

I’m always hearing how hard it can be to afford to eat healthy. That good food is just too expensive to buy. And I cannot bring myself to believe a word of that.

While that may have been true in the past, I feel that more and more markets are making it possible for people to buy healthy and organic foods at a realistic price that should be able to meet the budgetary needs of any family. For instance, earlier today I traveled to a magical place. No, not DisneyWorld…even better. Stew Leonard’s.

For those of you that may not know or have a Stew Leonard’s in your vicinity, I feel sorry for you. I truly do. It’s basically a smaller grocery store chain that stocks products that are fresh and great quality. It may not have as many products as a normal super market, but that it one of the things I love about it. By carrying less products, they ensure that everything they provide is of greater value, quality, and freshness. Their produce selection in particular is rather large, and there are always sales on items making them a great by.

Skincare is the Best Care

Most people that know me will straight up tell you that I am a low-maintenance kind of girl. My morning routine typically includes jumping out of bed at 6:30am and being out the door by 7am for work, so you know that there is no way I can really do more than showering and getting dressed for work in that amount of time.

While I do wear makeup, I am all about less is more. Touch of eyeliner and mascara, dab of lip balm and I am done. I doubt it even takes me a full minute to apply that. Anything that is fancier than that I save for weddings or maybe a holiday party. And it’s not that I don’t like makeup. I love makeup. And while I think makeup does a wonderful job in enhancing our features, there is something that I feel gets overlooked that is even more important in ensuring that we even have a good foundation to work with – Skincare.

When I was young and entering the early stages of my adolescence…well, let’s just say I was not one of the few and lucky that managed to escape a face full of acne. I have year’s worth of picture day photo’s that I have banned my mother from over displaying. It was bad. And it’s not that I didn’t try everything I could to fix it. Any acne treatment I tried did nothing but dry out my face and irritate me further. And nothing could hide the bumps on my face when I got older and tried to cover it up with makeup.

And then one day my mom bought me a face moisturizer. I started applying it daily, every morning after washing my face and for some reason that did the trick. My face was no longer irritated. My acne kept diminishing and eventually I started to even receive compliments for my skin. It was amazing.

Since then I have been a big proponent for skincare and that is where I am willing to bend my budget just a bit, to make sure I am keeping my skin healthy and glowing.

Hence my purchase earlier earlier this week…

I Know What I Did Last Summer: A Renovation Story

So as I have mentioned before, hubby and I have finally settled into our new home after months of preparation. It was probably the fastest and most hectic summer I have ever experienced. I finally summed up the courage the other day to look through some of the pictures I had taken during the renovation process and I must say, we have indeed come a long way.

Below are pictures of our Living/Dining Room Area under construction:

The first picture was taken immediately after the previous owner had moved out. It’s funny. When we saw the co-op originally, all decorated with furniture, we thought it was a fairly clean unit with a nice white carpet and we were impressed, especially after some of the other units we had seen.
